In a world where there are so many questions about the future, it can feel awfully comforting to bask in something from the past. And for many, the dish that conjures up some sweet memories is a good ole Southern Sweet Potato Casserole. Originally shared on Deep South Dish, this recipe is enough to make your heart feel all warm inside.

Oh, you remember it, right? The hot sweet potatoes meshing with the gooey marshmallows in a Southern treat that so many of us remember from holidays past. Your loved one carrying it from the kitchen to the dining room, reminding everyone to be careful since it was so hot coming right out of the oven. You can even envision the casserole dish that it would lay within.

While it might seem like a rather decadent dish, it’s important to remember that sweet potatoes are actually quite healthy. They are filled to the max with complex carbohydrates, dietary fiber and beta-carotene. Trust us — these facts will help you not feel as guilty when you ask for that second, or third, helping.

And while you might not think you can make it as good as your grandmother once did, have confidence! It’s simply not as hard as it looks.

Southern Sweet Potato Casserole Recipe:

3 to 4 large sweet potatoes, cooked and mashed (about 3 cups)
1/2 cup of unsalted butter
3/4 cup of granulated sugar, or to taste
Pinch of salt
2 large eggs, beaten
1/4 cup of half and half
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon nutmeg
1 teaspoon pure vanilla extract
3 cups of mini marshmallows, or praline topping below

Directions: Preheat oven to 375 degrees F. Butter a 1-1/2 to 2-quart casserole dish and set aside. Mash the cooked and cooled sweet potatoes until smooth; add the butter, half the sugar, pinch of salt and all of the half and half, cinnamon, ginger, nutmeg and vanilla extract; stir well and taste. Add the remaining sugar as needed to taste. Add the eggs and combine well. Pour into the casserole dish. Cover and bake at 375 degrees for about 30 minutes, until heated through well.

Remove, uncover and spread marshmallows on the top, bake uncovered about 10 minutes longer, or until marshmallows are nicely browned.
