To best celebrate National Grilled Cheese Day (April 12), you are going to need to do more than just partake in your ordinary sandwich.

This year, you are going to need to add some good ‘ole mac & cheese to that sandwich of yours. Because as good as a grilled cheese sandwich is, it just gets that much better when you throw in a little mac & cheese into the mix.

Borrowed from our friends at Delish, Mac & Cheese Grilled Cheese Sandwiches are the perfect way to enjoy all the gooey goodness that comes with melted cheese with the loaded carbs that comes with a little macaroni and a whole lot more cheese.

Oh, and did we tell you there is bacon involved? How amazing is that?

And lucky for you, there are relatively easy and quick to make, too! Essentially, it’s all about making your traditional macaroni & cheese, but then cramming it into your traditional grilled cheese sandwich. And lets just say when you bite into this concoction ... well, you might never go back to the old way again.

Mac & Cheese Grilled Cheese Sandwich Recipe:

1 box macaroni and cheese
2 tbsp. butter (plus more for cooking)
1/4 c. milk
2 c. shredded cheddar cheese, divided
4 slices cooked bacon, chopped
8 slices french bread

1. In a medium saucepan filled with boiling water, cook macaroni until al dente, about 7-8 minutes. Drain.

2. Melt 2 tablespoons of butter in the same pot over low heat. Add milk and cheese packet and whisk well. Turn off the heat and return macaroni. Add 1/2 to 1 cup of cheddar and stir until the cheddar is melted and the macaroni is evenly coated in the cheese sauce. Remove from heat. Fold in bacon pieces.

3. Assemble sandwiches: Butter one side of each piece of bread. For each sandwich, place one slice of bread buttered side down on a clean working surface or plate. Cover bread with cheddar cheese, then spoon macaroni and cheese on top. Sprinkle with more cheddar then top with one more slice of bread, buttered side up. Repeat process with remaining bread. (You may have leftover macaroni and cheese.)

4. Heat a large nonstick skillet over medium heat. Place 1 to 2 sandwiches (or however many will fit) in the skillet and cook until bread is golden and the cheese is melted, about 3 minutes per side.
