As 2019 is now upon us, chances are that there are a number of things you are looking to do in the new year to make your life better. Maybe that means going to the gym more often or cleaning out that messy closet, or maybe even finding more time just for yourself in the year ahead. Chances are you also will want to eat better in the next 12 months.

But not so fast.

The fact is that over the holidays, many of us have enjoyed a bunch of unhealthy food, and even worse, many of us might have drunk too much over the New Year’s Eve holiday.

And no one is craving a carrot when they are hungover.

So partake in one more fat-filled recipe before you begin your new year’s resolutions. Borrowed from our friends at Hungry, Bacon Cheeseburger Tot Casserole is the perfect mix of some of the world’s greatest hangover foods, all in one dish. It’s the perfect hangover cure!

Want to add a few things that are actually good for you? Feel free to top your casserole with anything from avocados, tomatoes or even pickles.

But really, who wants a tomato when they are hungover?

Bacon Cheeseburger Tot Casserole

Ingredients:

2 pounds ground chuck
1 yellow onion
3 garlic cloves, diced
1 teaspoon dried oregano, minced
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon black pepper
1/2 cup ketchup
1/2 cup mayonnaise
Cooking spray
12 slices bacon, cooked until crispy
2 cups sharp cheddar cheese shredded
1/2 cup pickled jalapenos, chopped
2 1/2 cups frozen tater tots, defrosted and sliced in half
2 avocados, diced
3 vine ripe tomatoes, diced

Directions:

Preheat oven to 350F. Brown beef in a large sauté pan over high heat. Once beef is browned add onion, garlic, spices, salt and pepper and cook until onion is translucent and spices are fragrant. In a small bowl mix together the ketchup and mayonnaise.

Grease a 9x13-inch baking dish with cooking spray. Add half of the beef mixture to the baking dish. Top with bacon slices, 1 cup of cheddar cheese, and the mayonnaise sauce. Sprinkle the pickled jalapenos over the sauce. Spread 1 1/2 cups of tater tots over the jalapenos, add the remaining beef mixture and tater tots. Sprinkle remaining cheddar cheese over the top and bake in oven for 30 minutes, until the casserole is hot and cheese has melted. Serve casserole with your favorite toppings.
